This beautiful fully washed coffee comes from the Kebel Kercha mill in the Guji district of Ethiopia, on the border between the Yirgacheffe district and the rest of Sidamo. The mill receives heirloom varietals from around 750 smallholder farmers in the area. The ripe cherries are delivered to the mill where they are graded, sorted, de-pulped and fermented underwater for 24-48 hours. The parchment is sorted into washing channels and then placed onto raised African drying tables. The drying period generally lasts for up to 2 weeks until the moisture level reaches 12% or lower.
In the cup this coffee is extremely bright and lively with notes of dried apricot and juicy peach.
